Not using a premade sauce. I want to make one from scratch.
I dont have measurements but for my standard I use

Low sugar/sodium ketchup
Sugar free maple syrup
ACV
Garlic powder
Cayenne pepper


For my Mustard
Mix of yellow and stone ground
ACV
Black pepper
Cayenne
Brown sugar
Honey

I haven't found a vinegar based that like to make myself yet.

My usual recipe:

1 cup hoisin sauce
Garlic powder (unmeasured)
Ground ginger (unmeasured)
1/2 cup light soy sauce
1/2 cup Shaoxing wine
1/2 cup white sugar
Five spice powder (unmeasured)

It’s great with pork ribs. Yes I’m Chinese-American, haha.

So, I improvised a sauce recipe...

Base:

1 cup apple cider vinegar
1/2 cup ketchup
1/2 cup hoisin sauce
1/2 cup brown sugar
1/3 cup yellow mustard
Dash Worcestershire sauce

Spices (measurements approximate since I eyeballed them):

1 tablespoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon ground ginger
1/2 teaspoon seasoned salt
1/2 teaspoon black pepper

North Carolina meets China today!

There are more zoonotic infections from pigs than cats and cows, so maybe. But, given the way most pigs for food are raised indoors (at least in the US), I think the bird to pig to human transmission route may not be as much of a risk as one from other livestock that have more interaction with wild birds.

With Washington out, Stormy is safe.
